Savoury Dosa Waffles

Hello everyone. I hope you are all safe, healthy and taking care of yourselves during the COVID-19 pandemic. It is difficult to say something that feels of much use during this time where everything feels so heavy. So much is being brought to light in how many of us struggle, in the many aspects of our lives. I truly do hope that apart from following the necessary health precautions for this virus we are all able to take some time to bring some calm into our day. I am turning to the kitchen for this; it has been my trusty companion in many other difficult times. And I do want to acknowledge that I am personally in a place of privilege, simply even to be able to do that. My loved ones are well, and we are able to stay home when possible without much negative impact to our lives. I am, of course, grateful for this. I would like to send lots of love to everyone who is working to beat this head on, the ones continuing to work so that we have access to food, medications and whatever else we need, and most certainly the people directly impacted by this virus.

 

Savoury Dosa Waffles with Crispy Fried Egg & Chutney

 

I will keep this a quick post about what I whipped up for brunch the other day. While at home we love to cook from scratch, one thing we often have on hand is a store-bought dosa mix. It makes weekend breakfasts really easy from time to time. I got a sudden craving for it midweek but had an idea for a little twist — Savoury Dosa Waffles!

The mix I used requires some yogurt, which I think gave a fluffier consistency to the batter. This reminded me of some cornbread fritters and waffles I’ve made in the past, as the yogurt acts similarly to buttermilk in cornbread. They are really so easy, especially because you don’t need to worry about making a perfectly thin (crêpe-like) dosa. You just add a few little extras to freshen up the batter, and cook it in the waffle maker until done! However, feel free to definitely make this into simple pancakes or thin dosas if you prefer. This whole recipe is flexible to what you have on hand and how many servings you’re making. You just want something beautifully golden at the end so you can smear it with chutney and possibly a crispy fried egg. Yum.

Savoury Dosa Waffles

Ingredients:

  • Dosa mix (the one I used needed yogurt which I believe made the batter fluffier)
  • Your choice of add-ins: I used chopped cilantro, scallions, a chili pepper & a few pinches of garlic powder (all according to your quantity and taste)
  • Eggs (optional, for frying and serving on top)
  • Chutney or other sauce, for serving

Directions:

  • Mix dosa batter according to package instructions, along with the add-ins (enough for the quantity you’re making) and let sit for a few minutes while waffle maker heats up.
  • Apply butter/oil on the plates to prevent sticking. Then, cook according to your waffle maker, until golden & crispy.
  • Top with a crispy fried egg & chutney. Enjoy!
